I read your article before responding.
Three things to think about.
1. To set the record straight for all the readers. 75% of Israel is not Jewish. Of the Jews one third have European heritage, the rest have M.E. and North Africa heritage. And yes, those Jews were systematically and violently ethnically cleansed from these countries in the greater MENA region
ALL citizens of Israel have full protection of voting rights. There are Muslims in parliament, on the supreme court (shocker to many), as doctors, students, etc...

Now that we have set that aside, let's discuss... :)
2. There are different "flavors" of religious or semi-religious democracies. Italy is officially secular but the Roman Catholic Church has a lot of sway... Spain is a better example, their constitution specifically references Catholicism as an inherent aspect of governance. The best example is England (Church of England). The problem isn't with religion per se, it is the degree to which religion is allowed to influence the public sphere. What these European countries get right is that the administration and operation of the public sphere is complete separate. The vast bulk of Muslim countries go the other way - theocratic dictatorships. It should come as no surprise that these countries are all screwed up.
3. Now to Israel... Israel has a different problem. Israel is a coalition driven parliament with a VERY low threshold for entry (much lower than European governments). So while you can say this is pluralistic, it has serious side effects in that extreme left/right wingers can get into parliament.
Now, couple that with Bibi, who is doing whatever he can to stay in power, so he further empowers these crazies but giving them key positions, and then you get support for the Judicial Reform.
The big fear of the majority of Israelis is that this will erode the separate of public services from religion. Already you can see it in that you have a stupid Ultra Orthodox guy who runs the Ministry of Health, and crazy right winger (Smotrich) who runs the Ministry of Finance.
